In Puglia, among the sandy dunes, the whispering sea, and the bushes of wild Mediterranean herbs, stands Colimena, a craft fish canning factory, whose products are now available in our offer.

Agostino Lomartire and Franco Scarciglia have been running this factory between the towns of Torre Colimena and Porto Cesario in southern Italy's Puglia for quite some time. On the site of the original historic tonnara, where tunas were processed, a modern laboratory has emerged, which still insists on manual processing and packaging and sustainability. Because, as they say themselves, good things need time and space.
In skilled hands, mainly yellowfin tuna, bonito tuna, small Ionian tuna, striped tuna from the Strait of Sicily, mackerels, and anchovies are processed. The fish are sustainably caught and gently processed. Unlike others, Agostino and Franco do not steam the fish but cook them in a broth with Mediterranean herbs and natural sea salt, which gives them their characteristic taste, juiciness, and firm texture. The meat is then hand-packed into jars and topped with sunflower oil.
