Weighted large black olives Bella di Cerignola with a pit in salty brine. Thanks to a special processing method called "Californiano", these olives are black on the outside but remain green inside. Only well-ripened olives are selected for processing, which then go through several phases of natural oxidation. Unlike industrial processing, where olives are artificially colored and therefore have black flesh as well, Fratepietro uses natural oxidation for blackening, which takes an average of 20 days and causes blackening only on the surface and not the flesh.
