Caprino Nobile Monte Jugo
Fresh, short-aged goat cheese with a more pronounced taste, a delicate consistency that melts in the mouth, and a thin, edible rind covered with noble mold. The Ciambella family produces it from the nutritious milk of their own herd of goats, which graze freely in Lazio. In 2017 and 2018, this cheese won the Oscar for the best Italian fresh cheese at the Italian Cheese Awards.

The Ciambella family from the organic farm Monte Jugo raises 500 goats of the Saanen breed, from whose milk they produce exquisite, variously aged cheeses. The herds graze in the wild and are supplemented with grains that the family organically grows themselves in volcanic soil full of thermal springs on the Palanzana plateau. Therefore, this grain has a unique aroma and taste, and it not only ends up in the stomachs of the goats but is also milled into excellent nutritious flour.
