Pecorino Burghidu cheese made from unpasteurized sheep's milk matures for at least 12 months. The Demarcus family makes it by hand according to Sardinian traditions from the milk of their own flock of sheep, which graze on wild herbs in the pristine Sardinian nature. You can eat it on its own as an appetizer, or grate it and use it to flavor first and second courses.
