Duepecore Tino Paiolo
Mature cheese with a distinctive, mildly spicy taste from unpasteurized sheep's milk from mountain pastures in Piedmont. The Tino Paiolo cheese factory produces authentic Piedmontese cheeses from the milk of its own cows, sheep, and goats. Their unique taste is due not only to a hundred years of experience but also to the fact that the entire production process from breeding, through production to maturation takes place under one roof, and animal welfare is a top priority.

When young Davide Fiandino took over his father's family farm in the Valle Maira valley, the first thing he did was rename it to Tino Paiolo. Davide was inspired by two containers (tinozzo and paiolo) originally used in cheese production when coming up with the name. Today, they have been replaced by much larger vats, and Davide's herds of cows and sheep have also grown. With more than 200 animals, he produces typical Piedmontese cheeses for this valley, led by the unforgettable Castelmagno, which mature on wooden boards in cellars under the production facility located in the beautiful Valle di Castelmagno.
