Its typical black rind is created by rubbing with a mixture of olive oil and vegetable charcoal, which serves as protection during aging and extends the cheese's shelf life. It has a distinctive robust flavor with herbal and animalistic notes, and as it ages, its taste becomes slightly pungent.
