Medium matured Tuscan cheese made from pasteurized sheep's milk with a characteristic reddish rind that is created by rubbing a mixture of olive oil and tomato paste. It has a soft compact structure, a full delicate taste with gentle herbal tones. Excellent as part of cheese boards and with fresh seasonal vegetables.
