Fanes Luch da Pcei
Fanes is a soft cheese with a mild flavor and a characteristic yellow rind. It is made from unpasteurized whole cow's milk, rich in omega-3 fatty acids. The milk comes from cows bred by the Crazzolara family on the mountain farm Lüch da Pcei in Alto Adige. Fanes ages for 3 months, during which the cheese forms are washed three times a week with a concentrated solution of water and salt until a thin orange rind develops.

The cheeses and yogurts produced by the Ladin cheese dairy Lüch da Pcëi in the Alta Badia valley are a showcase of traditional values and approaches to nature, which have allowed the ancient mountain people of the Ladins to maintain their distinctiveness in the Dolomites for centuries. On the mountain farm, which the Crazzolara family has inhabited for more than five centuries, they raise a herd of 60 cows and produce excellent quality yogurts and cheeses right on site. All products are handmade according to original Ladin recipes. Thanks to their high content of omega-3 unsaturated fatty acids and excellent processing, their products are among the best that the Dolomite valleys can offer.
