Soft cheese with a sweet milky taste and an unusual triangular shape. Great lightly grilled, in burgers or omelets. Made from unpasteurized cow's milk from mountain pastures in Piedmont. The Tino Paiolo cheese factory produces authentic Piedmontese cheeses from the milk of its own cows, sheep, and goats. Behind their unique taste lies not only a hundred years of experience but also the fact that the entire production process from breeding, through production to maturation takes place under one direction, and animal welfare is a top priority here.

When young Davide Fiandino took over his father's family farm in the Valle Maira valley, the first thing he did was rename it Tino Paiolo. When coming up with the name, Davide was inspired by two containers (tinozzo and paiolo) originally used in cheese production. Today they have been replaced by much larger vats, and Davide's herds of cows and sheep have also grown. With more than 200 pieces, he produces typical Piedmontese cheeses for this valley, led by the unforgettable Castelmagno, which mature on wooden boards in the cellars under the factory located in the beautiful Valle di Castelmagno valley.
