Taleggio DOP Pezzetta
This square typical soft cheese made from cow's milk is produced in the Lombardy provinces. A mold forms on its brown (or orange) rind, directly under the rind the paste is soft and straw-yellow. Inside, the cheese is compact, brittle, and has a whitish color. The intense aroma and taste may resemble Romadur. The cheese is suitable for polenta and ripe pears. The ripening period is at least 1 month. Taleggio has carried the DOP designation since 1988.
